Course by Course
Start your meal with a choice between sunchoke and white miso soup topped with candied pine nut and brown butter crouton, or fluke crudo with watermelon radish and yuzu dressing. The second course brings butter-poached lobster with champagne sabayon, or cornish hen with roasted winter roots and herb pistou.

Your third course offers branzino with charred romanesco and wilted spinach, or sablefish with king trumpet mushroom and braised fennel. For the main, you’ll choose between short rib with roasted gold beet and madeira veal reduction, or grilled bison with charred cabbage and honey-roasted baby carrot.

Dessert closes the evening with either “practical magic”—pineapple meringue with coconut cream and rum caramel sauce—or “call me old fashioned,” featuring milk chocolate cremeux with malt shortbread and butterscotch.
