Rise and Shine: Brooklyn Pastry Stars Bake Through Pastry Week at The Momentary
Pastry Week at The Momentary brings a James Beard Outstanding Pastry Chef finalist, an IACP award-winning pie maker, and two of NWA’s own bakers together for six days of butter, sugar, and very full hands. Cold weather is a lot easier to love when somebody else preheated the oven!
Eleven events run December 1 through December 6, and every ticketed one books on its own. Grab one workshop, or go full sourdough starter and build your whole week around the schedule.

Hometown Bakers Kick Things Off
The week opens with a name Bentonville already knows. Annie Clapper spent seven years running The Family Crumb, where her pop-up shops drew lines out the door. Her customers kept asking for a recipe book until she gave in and wrote one. On December 1 she teaches her orange rolls from scratch, in a vegan-friendly version, with techniques you can repeat in your own kitchen.

Springdale’s Stephanie Long opened The Cake Occasion at 17, trained at Brightwater Culinary School, and has spent nearly a decade in the cake business. In her words, it wouldn’t be a party without dessert. Her decorating workshop covers frosting, piping, and how color and texture come together. You leave with a cake you decorated yourself, so you’ll have proof for the group chat.
Stacey Mei Yan Fong Rolls Out the Pie Crust (and the Book Deal)
Stacey Mei Yan Fong came to baking the long way around. She was born in Singapore and spent time in Indonesia before growing up in Hong Kong. She then spent a decade designing in fashion, until her “50 Pies 50 States” project led her to Four and Twenty Blackbirds Pie Shop. Today she’s an IACP award-winning baker and author based in Brooklyn.

She’s teaching two classes:
- Savory Pie Workshop: Start with the fundamentals of tender, flaky dough, then head home with a pie you assembled yourself, ready to bake.
- Cookbook Writing Workshop: Learn how to shape a concept, build stories around food, and get from idea to finished book. Sitting on a box of Grandma’s recipe cards? This one’s got your name on it.
Caroline Schiff Brings the Brooklyn Heat
Caroline Schiff, known to Instagram as @pastryschiff, was most recently Executive Pastry Chef at Gage & Tollner. In 2022 she was named a Food & Wine Best New Chef and a James Beard Outstanding Pastry Chef finalist. She wrote The Sweet of Sourdough, and her second cookbook, Daily Dessert, is on the way.
Her canapé workshop covers three savory pastry hors d’oeuvres. It also comes with real hosting advice on menu planning, presentation, and making guests feel welcome, which is good timing with December party season right around the corner. Then on Saturday, her diner pop-up offers an early taste of Monday Diner, her first brick-and-mortar restaurant. She’ll serve a prix fixe menu, and Stacey’s hand pies will be available à la carte.

Thursday night, the s’mores meetup puts both headliners around a fire together. You get stories, a festive cocktail, and a marshmallow toasted to exactly the shade you like. No judgment if you set it on fire on purpose.

Popcorn Optional, Pastry Required
Each film night comes with something to make or taste:
- Matilda: A truffle flight from Markham & Fitz Chocolate, with each truffle matched to the film’s characters and themes. Bruce Bogtrotter would approve.
- Little Women (2019): Greta Gerwig’s adaptation, paired with cookie decorating.
- Into the Woods: A baker and his wife set out to lift a family curse, and you build a gingerbread house with the supplies provided while it plays.

The Bakers Market Is Free (and First Come, First Served)
On Saturday afternoon, local bakers and pastry chefs fill The Atrium with fresh breads, pastries, desserts, and more. You don’t need a ticket, but vendors sell until they run out. Show up early, or settle for crumbs.
See you there, NWA.
